Chocolate Strawberry Tart

Makes 12 slices

This decadent dessert features cocoa powder, rich in phenylethylamine (PEA), a compound that your body naturally releases when you’re in love. The fresh strawberries, high in vitamin C, help to synthesize hormones involved in putting one “in the mood.”

½ cup unsalted, organic butter
1 cup whole wheat flour
½ cup unsweetened cocoa powder
1 whole egg
½ cup unrefined dark brown cane sugar (muscovado)
1 beaten egg white

Combine all of the ingredients except beaten egg white using a hand mixer or a stand mixer. Pat the dough in a 12” tart pan. Chill. Preheat oven to 350°F. Brush the surface of the dough with the beaten egg white. Bake for 10 minutes.

1 lb. fresh strawberries, sliced in half
2 eggs
¼ cup heavy whipping cream
½ cup unrefined dark brown cane sugar (muscovado)
1 teaspoon vanilla extract
2 ounces dark chocolate (70% or darker), coarsely chopped

Beat egg, cream, and sugar. Lay strawberries on dough in an attractive pattern. Drizzle egg mixture over the fruit. Bake at 350° for 40 minutes. When the tart is hot out of the oven, sprinkle the chopped chocolate over the top. Allow the tart to cool to room temperature. Serve with lightly sweetened whipped cream. Refrigerate leftover portions.
